Ingredients
-
4-6 of your favourite medium size sausages (I like a mix of Lamb merguez and mild-med chorizo)
-
3 Bunches of Curly Kale-stems removed
-
1-2 lbs of your favourite mashing potato (may want to peel them but not necessary)
-
1/4 – 1/2c of grassfed butter
Method
- In instapot put all the de-stemmed kale on the bottom
- Wash potatoes and lay enough to cover the kale
- Lay Sausage across the top of the potatoes
- Add roughly 3/4c of water to the pot
- Set to Meat on Instapot. Pressure cook for 22 minutes
- After it has naturally lost pressure, remove lid
- Take sausage out and cut into bit-size pieces
- Drain water out of the instapot
- Add butter to the pot with the kale and potatoes
- Use a masher or a magic stick and mash the potatoes and kale together
- Stir in sausage
ENJOY!
NO INSTAPOT– easy! Do as my grandmother did and put in a pot on stove top. Bring to boil and turn down to a simmer. Let simmer for a couple hours or crank the heat and cook it faster. Grandma left it on the stove all day on a real low temp!
